Historical:
  • About the years 1870, an Alsatian of the name of Frederic Alfred Shurrer arrives at Quebec. Its name was francized in "Serrurier". As its name was complicated to pronounce and that it had a strong German accent, the nickname of "L'allemand" (German in french) was applied to him. "L'allemand" was transformed into "Lallemand" which will become later its surname.
  • In 1930, construction of the factory of the Préfontaine street in Montreal. This factory, "Fred A. Lallemand Refining Company of Canada Ltd" produced especially a shortening based on cotton seed oil and distributed of the "Yeasko" and malt syrup.
  • in 1933, production of baker's fresh yeast.
  • Fred Lallemand died in 1934. Fred son's, Fred jr. and Jean take over the company.
  • Starting in early 1943, dry yeast production.
  • Sale of the company to the businessman Jean-Louis Lévesque. Jean Lallemand will take an active part in the cultural development of Montreal. He will be one of the founders of the symphonic orchestra of Montreal.
  • In 1952, Roland Chagnon, an accountant and manager for "Dupuis et Frères" store, buy the Lallemand company
  • Starting in 1974, production of speciality dry yeast for wines.
  • Robert "Bob" Briscoe became the company's president in 1975. Beginning of the production of fresh distillery yeast for the "Seagram's" company.
  • Jean Chagnon, son of Roland, became president in 1981.
  • In 1982, Lallemand is installing a liquid yeast system. This "facon de faire" was ridiculised until most of the biggest bakery adopt this system. It was a first in America
  • Acquisition in 1983 of "Sétric Biologie" in France. This acquisition will allow Lallemand to expand is knowledge on wines and distillery yeast.
  • Acquisition in 1985, of "Malone oil" company which produce oil and grease.
  • The next year, acquisition at 50% of a proprionate and organics salts. The company was named "Macco Organiques Inc."
  • In 1988, Sétric Biologie bought "Équilait and Équipharm" both in Aurillac, France (St-Simon). This company was renamed "Lallenand S.A." and is specializing in lactic bacteria. The Lallemand S.A. office is located at Toulouse.
  • Also in 1988, Lallemand bought "Danstar" in Greena, Danemark and the trade name "Uvaferm". Lallemand is then the biggest wine yeast producer.
  • Lallemand bought in 1989 , the fresh yeast plan "American Yeast Corp" in Baltimore. at the same time it takes over the distribution warehouse located in Derry, New Hampshire.
  • In 1990, "Lallemand" and "Esseco" bought "Sofralab SA" whom is specialised in wine yeast for wines said to be "tranquilles" or quiet. It is located in Champigny and Epernay (France)
  • Acquisition in1993 of the fermentation activity of "Quali Tech" (micro-organisms) in Minneapolis.
  • In 1995, acquisition of "Gist-Brocades" and the trade mark "Eagle" and "Fermipan" for north america. The Bakersfield plant in California is now operated by "American yeast" and the Old Bridge plant in the suburb of New-York is dismantled and the equipment is brought back in Montreal
  • The Montreal plant enlargement in 1996 is for the production of instant dry yeast.
    The same year, acquisition of a fresh yeast plant "Salutaguse Pärmitehas A.S." at Salutaguse in Estonia (near Tallin).
    Lallemand is having a 50% interest in "Harmer Hefe GesmbH" and a fresh yest plant at Hof in Germany. This company controls "Hagold Hefe GesmbH" in Austria and exploit a yeast plant near Vienna.
  • In 1997, acquisition of "Primalco Biotech Speciality yeast" of Alko in Finland.
    The same year, Lallemand have the majority of "Alimentos Framex" in Tultitlan (Mexico). The new company will be renamed "Galliapan SA de C.V." (fresh and liquid yeast).
  • The year after, Lallemand bought "L'institut Rosell" of Montreal. The company produce micro-organisms for human and animal consumption..
    Lallemand acquired "Laporte Biochem International feed". This company produce lyophilizied bacteria and nutritious gel for human and animal consumption. It is situated in Milwaukee, Wisconsin.
  • In 1999, Lallemand acquired "Agritek Bio-ingrédients" (animals feed) and a plant in France at Louverné.
    The same year, Lallemand invested, with some partners in a research lab on fungus diseases. The company, "Mycota Biosciences inc." is bought later by "Elitra pharmaceutical" in december 2000.
    In Europe, Lallemand bought a fresh yeast plant in Lithuania, the "SEMA JSC Yeast Factory" at Panavezys.
  • In 2000, Lallemand became an impotant sharehokder in the "Siebel Institute" in the USA. This insitute speciality is in the beer ingredient activity.
    The same year, acquisition of'"Oenofrance" by a branch "Sofralab SA". Lallemand is expanding is consulting departement to wine producer with the presence of the "Station Oenotechnique de Champagne" at Epernay, and many Oenofrance laboratory in Provence, in Alsace, in the Nantais county to Bordeaux.
    The same Lallemand's division (Sofralab SA) bought "Santel S.A." and their branch owned by "Innovium Capital Corp." (formely Agritek Bio Industries).
    In the last decade, Lallemand has developed with Santel, many strains of yeast for animal feeding.. They are sell under the name "Levucell", and they got the European certification.
  • Early 2001 (march 1st), Lallemand acquired "AB Vickers" from "BTP Chemical PLC". The company is located at Burton on Trent in England. The company speciality is in the beer industry.
  • Since january 1st 2001, Lallemand is part of a consorcium of many companies in Europe. This project named "Nutra Cells", will serve to demonstrate the beneficial effects of fermented goods, especialy the "Neutraceutics". The "Commission Européenne" sponsor this study.
